A new wine from the most improved Margaret River Producer. Uses extended skin contact, barrel fermantation, wild yeast leesstiring the partial malolatic fermentation. Aromas of citrus and light dried herbs. The palate is rich with lush stone fruits supported by a fine acid and a light flinty minerality. Terrfic stuff.

The wine is a delicate blend of estate-grown Sauvignon Blanc. Various techniques were employed in the production of this wine including extended skin contact, barrel fermentation and judicious lees stirring, all of which enhance textural qualities and complexity. A small portion was fermented naturally and allowed to go through partial malolactic fermentation. Portions fermented at cool temperatures in stainless steel tanks bring freshness and drive to the palate. Careful blending of the various components has resulted in a wine where the sum is far greater than the parts.
